About this coffee

At La Huaca, the coffee cherries are picked only when fully ripe, with Clever enforcing strict quality standards during harvest. The cherries then undergo a 72-hour fermentation, followed by multiple washings to remove the mucilage. Afterward, they are dried for approximately 15 days.

 

In recent years, Clever has significantly improved the quality of his coffee by maintaining rigorous picking standards and extending the fermentation process beyond the usual timeframe.

 

We’ve roasted Clever’s coffee to highlight its biscuity sweetness and gentle juiciness to bring you a clean, smooth and versatile cup.
