About this coffee

The Tolima department is renowned for its towering mountains, cool climate, and rich volcanic soils, which create ideal conditions for producing exceptional coffee. As one of Colombia’s most productive coffee-growing regions, Tolima has consistently been represented in the prestigious Cup of Excellence competition.

 

This outstanding natural-processed coffee was produced by Cofinet’s partner associations in Tolima, which bring together approximately 175 coffee-farming families. Since 2019, Cofinet has provided technical assistance and training in natural processing methods, helping farmers improve quality and consistency. As a result, most of these growers now process at least 80% of their coffee as natural, showcasing the region’s potential for producing distinctive and high-quality coffees.

 

Following processing, the coffee is decaffeinated via our much-loved Sugarcane EA (ethyl acetate) method. Derived from naturally occurring compounds found in sugarcane, this process is renowned for preserving the coffee’s intrinsic character, sweetness, and complexity.

 

An incredibly complex yet full cup. A coffee that literally tastes like the finest, poshest chocolate with that characterful fruitiness that only the fanciest choccy has. A honeyed roundness and a bright pineapple-esque acidity to bring it back to balance.
