About the Fermentation Project
Opportunities to taste a fermented coffee alongside its unfermented counterpart are incredibly rare. The Fermentation Project gives coffee lovers around the world the chance to compare them side by side, exploring how different fermentation methods and processing techniques shape the flavour of the very same coffee.
To make this possible, four coffees have been produced from the same lot using four different fermentation processes. By keeping the origin, variety and all other variables constant, the project highlights how microbiological activity during fermentation alone can influence the final cup.
About Lucia Solis
Lucia Solis is a leading coffee fermentation and processing consultant. She studied Viticulture and Enology at the University of California, Davis, specialising in microbiology and fermentation science. After nine years in wine production in Napa Valley, she transitioned to coffee in 2014.
With more than 12 years of international experience across over 15 coffee-producing countries, Lucia helps producers simplify processing from fermentation through to drying. Applying microbiological principles, she develops practical, scalable processing systems that deliver greater consistency, improved operational control and higher-value coffees.
For the Fermentation Project, Lucia designed and oversaw the four distinct fermentation protocols, creating a unique educational tasting experience that demonstrates the impact fermentation can have on flavour while keeping every other variable as consistent as possible.
