There are two key problems that many coffee producers face all over the world. These are - a lack of adequate infrastructure to produce high quality coffee and access to fair and stable prices.
Our import partner Raw Material sought to address this by working with a group of farmers living in the area around the town of Pitalito in southern Colombia. They have built a community drying bed facility and quality control lab to ensure that the farmers have access to the infrastructure they need.
By placing these processing facilities at the centre of the community it has allowed for farmers to come together, improve their coffee production by sharing knowledge and Raw Material provide a stable and sustainable pricing system. This means that the farmers are able to earn 2.5x the average household income for the area, giving them the much needed stability that they fully deserve for their efforts. We think that this is pretty cool!
The coffees are harvested, fully washed and then sent to a plant to go through the sugarcane decaffeination process, which is a natural way to decaffeinate coffee. The plant uses water from the Navado el Ruis volcano and natural ethyl acetate from fermented sugarcane, sourced from Palmira, Colombia.
The porosity of the coffee is increased through the use of steam, which begins to break the bond between caffeine and the bean. The bean is then submerged in the fermented sugarcane liquid, until 97% of the caffeine is removed. Following this a final steam takes place to clean up the beans.
The end result is a beaut decaf coffee that has retained it’s flavours for you to sip on and enjoy.
